Such bright and impossibly delicious pancakes, not only create a spring mood, but also perfectly decorate your festive table at Shrove Tuesday. They turn out with a very delicate creamy flavor, and the rich color of the sun is sure to leave no one indifferent.
- Flour – 200-240 gr.
- Eggs (large) – 2 units.
- Cream – 150 ml
- Milk – 350-400 ml
- Sugar – 1 tbsp.
- Salt – 1 pinch
- turmeric – 2 tsp.
- Vegetable oil – 20 gr
Step by step recipe “Sunny” pancakes:
In a large clean and dry container break the eggs. For this recipe, 2 will be enough. Eggs must be at room temperature.
Add a little salt, very little, 1 tablespoon of sugar. 1 teaspoon vanilla sugar. Now beat well with a whisk to get a fluffy mass.
Add 150 ml of liquid cream. I have 20% cream, but you can also take 15%. It is cream in this recipe and gives the pancakes a very creamy taste. The pancakes are incredibly tender.
And again we beat all well until a fluffy foam.
We take another container and we will sift flour into it to make the pancakes airy.
When the flour has been sifted, we put it aside and return to the egg and butter mixture. Introduce the room temperature milk.
Now add 2 teaspoons of turmeric. Whisk with a whisk.
Gradually add sifted flour. I’ll do it slowly, 2 spoons of flour – and beat with a whisk. This way there will be no lumps and you will make a pancake batter of excellent consistency.
That’s it, the batter is ready. It should not be too liquid and not too thick. The consistency of an ideal pancake batter is most like liquid sour cream.
Before baking the pancakes, I add a tablespoon of vegetable oil to the batter and mix well. The batter will be more elastic and the pancakes will not stick to the pan.
Bake the pancakes on a very hot pan. It is best to use a special pancake pan.
Ready pancakes with turmeric are stacked on a plate, and you can even lightly smear the edges of each pancake with butter. But this is to the liking of the pancake. I like it when they are not buttered.
