Citrus birthday cake

This citrus birthday cake is quite simple to make, and is sure to impress your guests. A wonderful birthday bake or New Year’s Eve bake, add this recipe to your menu for New Year’s Eve 2022.

Products :

  • Butter (softened) – 400 g
  • Big eggs – 6 pcs.
  • Sugar – 400 gr
  • Flour – 400 gr
  • Citrus of two lemons and two oranges
  • Dye, yellow and orange (optional) – a few drops

For the syrup:

  • The juice of 1 lemon and one orange
  • Limoncello” liquor – 1 tbsp.
  • Sugar – 50 grams

For the cream:

  • Butter (softened) – 130 gr
  • Cream cheese – 250 g
  • Sugar powder – 250-500 gr (to taste)
  • Limoncello” liquor – 1 tbsp.

How to cook citrus cake:

  1. activate the oven to preheat to 190 degrees. Cover 6 round cake tins of 20 cm in diameter with parchment.
  2. Beat the softened butter and sugar until fluffy. Then one at a time, beat in the eggs, beating thoroughly after each one. Then mix in the flour.
  3. Pour half of the citrus cake batter into another bowl. Add lemon zest and yellow dye to one bowl of the batter, and orange zest and orange dye to another bowl, respectively.
  4. distribute the dough evenly into the molds. If you don’t have that many molds, you can bake the cakes one at a time. Bake each crust for about 10 minutes, but do not overcook so that they are fluffy. You should have a total of 3 yellow and 3 orange shortcakes. Let the cakes cool at room temperature.
  5. Meanwhile make syrup. In a small saucepan combine the lemon juice with limoncello and 25gm sugar. Turn the saucepan over a medium heat and cook the syrup, stirring until the sugar has dissolved. Then remove the saucepan from the stove and pour the syrup into a bowl or glass. In the same saucepan, combine the remaining sugar and orange juice, also boil the syrup and pour into a separate bowl. Allow the syrup to cool.
  6. While the syrups are cooling, you need to prepare the cream. In a large bowl, beat the butter until fluffy, then add the cream cheese and beat well again. Gradually add granulated sugar and beat until elastic and homogeneous. Then add a spoonful of limoncello, mix and place the cream in the fridge for 10-20 minutes.
  7. The final stage – assemble the citrus cake. On a serving plate put the orange cake, soaked in orange syrup and butter the cream, put the yellow cake on top, soaked in lemon syrup and butter the cream. Repeat the remaining layers, alternating yellow and orange. You can decorate the finished citrus cake with citrus zest
